Japanese sweet potato curry

  1. Microwave sweet potato cubes according to instructions on bag.
  2. Saute ground beef in pan. Add sweet potato cubes. Season with salt, pepper, garlic powder, and chili powder.
  3. Add Japanese curry seasoning block.
  4. Add water to desired consistency (add some water, stir, add some more, stir…)
  5. Serve over pasta.

 

This tasted great! However, it all glommed together into a kind of paste, because the sweet potato did not stay as cubes, but fell apart into a starchy mass. Possibly I could’ve added more water (at the time, I was concerned about diluting it too much, but afterwards I saw it’s intended for a stew/boil prep so more water would’ve been totally fine).

Serving suggestion: Because it’s so thick, it would make a great burrito filling. Put in tortilla, fold, lightly pan-fry with a bit of olive oil.

edit (9/15): Made a quesadilla with the leftovers (not a burrito, since I only have small tortillas on hand). Easy air fryer quesadilla prep: Air fry for 3 minutes at 375 degrees.
