Roasted sweet potatoes (blob style)
- Microwave sweet potato cubes according to instructions on bag.
- In bowl, mix olive oil, cajun seasoning, old bay seasoning, pepper, and garlic powder. Toss sweet potato cubes to coat.
- Bake at 375 degrees for 14 minutes (this is based on me putting it in with tonight’s salmon; since it’s cooked already, it doesn’t necessarily need that long).
A simple and good side dish. I’ve tried this prep before with cubed potato hash, and it doesn’t really work (it’s too dry), but it’s great with sweet potatoes.
Future ideas:
- Curry powder would be great (though I don’t think I have any at the moment, just Japanese curry blocks)
- For a sweet prep, brown sugar + cinnamon is classic. (Buy brown sugar? Or substitute white? Or honey? Would need to lower the heat for honey so it doesn’t blacken.)
