Roasted chicken & potatoes (one-pan prep)
Came back from visiting brother with the urge to cook more. The recipes I’m most eager to try (corn fritters, Mom’s salmon) will have to wait until the next shopping trip, but for now, we have a lot of potatoes that need eating.
- Coat bone-in chicken thighs with fried chicken seasoning powder. (I’m using this bag of “Mr. Hung”-brand seasoning that Mom gave me literally forever ago.)
- Poke holes in little potatoes with fork and microwave for 5 minutes.
- Cut potatoes in half.
- In plastic bag, mix olive oil, cajun seasoning, old bay seasoning, and red jalapeno garlic. Add potatoes and toss to coat.
- Add leftover Mr. Hung powder to bag and re-toss.
- Put chicken and potatoes on pan. Air fry at 375 degrees for 20 minutes.
Easy and great!
