Corn fritters

Here’s the recipe from the baby book. (The original recipe had quantities, but I just winged it)

  1. Mix flour and egg to create a thick batter.
  2. Season with old bay seasoning + red jalapeno garlic.
  3. Add canned corn.
  4. Fry large spoonfuls on a pan at medium-high heat.

 

They were decent but unexciting. They could’ve used more seasoning. But even with that, the recipe still feels a tad barebones…maybe add green onion? Shredded cheddar cheese?

I consulted google. Everyone’s corn fritter recipe is slightly different, but there are commonalities: (1) Everyone adds milk, and often an additional source of fat (e.g. heavy cream, melted butter). (2) Most recipes add sugar. (3) Most recipes call for deep-frying instead of pan-frying.

So it looks like the version I tried was a low-fat low-sugar version that is better for baby (and me). I’m definitely not deep-frying, but I can try adding some milk and a bit of sugar next time around.
