Mmmmm food is good

I took today to putter around my house and do random tasks. I have accomplished a lot. A little corners that just feels so much better to look at. Even when my progress is very very slow, I still make progress my body does not always cooperate, and neither does my mind actually. I’m blessed to have the time and not have to worry about work at the moment. Money is very very very difficult that comes with its own battles, but my priority is managing just me and this house successfully for several months before I take on anything else. I feel like I might have a few in my life who don’t agree with this , God knows, I’ve tried everybody else’s way, and this just doesn’t work for me. Anyways, tonight I made yummy food as part of my #self-care and #health. I love coming up with my own recipes, but always forget about writing them down. This one came out too. Amazing to not remember it. Also, I’ve been playing with an Instanpot. I swear this thing is magic! So here’s the recipe I came up with tonight:

The ingredients:

1 pound of Hamburg.

One block of sharp cheddar cheese, shredded

1 cup sour cream

One onion, chopped

Three garlic cloves, finally, chopped (hack-use a fine cheese grater instead)

1 teaspoon parsley flakes

1/2 teaspoon of paprika

1/2 teaspoon salt

1/2 teaspoon pepper

3 cups of unsalted chicken stock

One can of playing tomato sauce

Cooking:

sauté the onion, garlic, hamburg and spices until hamburgers cooked and room smells fragrant.

Poor in chicken stock and tomato sauce

Add one box of elbow macaroni

Seal instant pot lid and set. Manual pressure. Cook timer for five minutes, quick release, when timer goes off. Add cheese and sour cream and mix until well blended. Serve immediately.

edit to add:

finely chopped red peppers would be an incredible addition to your onion and garlic sauté and finished off with sourdough Garlic bread as a side dish. Yummy!

this is the ultimate in comfort food! It warms the soul🥰♨️
